Let's be clear

Cambodia, the second stop — not the only one

Asian Road isn't a Cambodian restaurant. It's Southeast Asian street food with no fixed country, borrowing from five cuisines — Vietnam, Cambodia, Laos, Indonesia, Malaysia — what each does best.

After Vietnam, the road runs through Cambodia. It's stop 02: the stop of sweet and salty. A cuisine that dares to brown sugar with fish sauce and pepper — sweet on one side, salty on the other, never in between.

What we brought back

What Cambodia left on the road

Not a copied recipe: a line of flavour, slipped into a menu that mixes the stops.

  • Caramel

Sugar left to brown without fear: sweet, salty and peppery, it catches in the wok and glazes the meat.

    Cambodia
  • Pepper

Over there, it answers the sugar and the fish sauce. Here, it keeps the caramel sharp, so it's never flat.

    Cambodia
  • The Caram'Chicky

The flavour that comes straight from it: “Crisp-tender wok chicken, coated in an irresistible sweet-and-salty caramel sauce.”

Cambodian style

The sugar browns, the wok does the rest

A bit of buzz outside, the kitchen in sight, and a flavour caramelising right before your eyes: the spirit of Southeast Asia's night markets, Aix edition.

    You pick your base

Rice or noodles, five bases readable at a glance at the counter. Then the flavour: the Caram'Chicky, if you want the Cambodia stop.

  2. A cook tossing noodles in a wok over a high flame

    The caramel hits the wok

Over a high flame, the sauce catches, coats, glazes. That's where the sweet and salty come together, in a few seconds.

    The box leaves with you

About three minutes, and the box is in your bag: at the office, on a bench in town or back home.
