Cooked when you order, not ahead

In Southeast Asia's night markets, everything happens at the wok: a high flame, a quick flick, and noodles that pick up a taste of fire you won't find anywhere else. That's the move Asian Road brought to the centre of Aix-en-Provence.

Made-to-order wok means short, intense cooking, started when you order. The dishes are set, the kitchen stays in sight: pick your base and flavour at the counter, and it's already there.
