Let's be clear

Vietnam, the first stop — not the only one

Asian Road isn't a Vietnamese restaurant. It's Southeast Asian street food with no fixed country, borrowing from five cuisines — Vietnam, Cambodia, Laos, Indonesia, Malaysia — what each does best.

But the road starts in Vietnam. It's stop 01: the stop of freshness, of raw herbs laid on a piping-hot dish, and of that way of serving fast and hot, standing, at the edge of the pavement.

What we brought back

What Vietnam left on the road

Not a copied recipe: habits and reflexes, slipped into a menu that mixes the stops.

  • Fresh herbs

Mint, coriander, lemongrass: added at the very end, raw, on a dish straight off the flame.

  • The nem

On the Crispy Road, chicken nems come alongside the box — crispy, eaten with your fingertips.

    Asian Road
  • The veggie nem

The same golden crust, meat-free: the veggie version has its place in the bag.

    Asian Road
  • Pavement service

Fast and hot, no fuss: the Vietnamese school of service, the one that keeps the three-minute promise.

A bit of buzz outside, the kitchen in sight, and an order that shows up before you've had time to wait: the spirit of Vietnam's street stalls, Aix edition.

    You point at the counter

No endless menu: five bases, five flavours, readable at a glance. Point, pair, and off we go.

  2. A cook tossing noodles in a wok over a high flame

    The wok fires up

Fried noodles and rice, flavours: everything goes through the wok over a high flame, right in front of you. The herbs come last.

    You take it with you

About three minutes, and the box is in your bag: at the office, on a bench in town or back home.
