Why cook with a wok?flame, shape and flavour

A round pan, a high flame and a few seconds of movement: the wok is the backbone of Southeast Asian street food. Here's what makes it unique.

  • 1pan for everything
  • 3 minof high heat, no more

Origins

A pan built to cook fast with little

The wok was born from a simple need: cook a lot, quickly, with little fuel.

One wok can sear, stir-fry, simmer, steam and even deep-fry.

That efficiency travelled across Asia and still drives street food today.

The taste of flame

“Wok hei”, what a frying pan can't give

“Wok hei”, the breath of the wok, is that smoky, grilled, slightly caramelised taste. It comes from three things brought together by intense heat.

That's why wok dishes are cooked to order: the taste of flame fades if the dish waits.

The method

Three movesto master the wok

Everything happens too fast to improvise: prep, sear, serve.

  1. A street food stall lit by red lanterns, ready for the evening rush
    01

    Prep before lighting

Everything cut, mixed and drained before the first flame.

  2. A steaming box of wok-tossed noodles topped with spring onions and sesame seeds
    02

    Sear in the right order

Longest-cooking first, quickest last, the wok never rests.

  3. A hand holding a kraft takeaway bag in front of an Asian restaurant lit by red lanterns

    Serve at once

The taste of flame doesn't wait: straight into the box, still steaming.

The pitfalls

Mistakes that boil instead of stir-fry

Soggy vegetables and grey meat usually come from one of these four mistakes.

At the counter

At Asian Road, the wok cooks to order

You order at the counter, and it's already there.

At 9 rue Laurent Fauchier, the wok sits at the heart of an open kitchen, fired up when you order.

Garden Fried Rice, Garden Noodz, Caram'Chicky and Beef'Woky go through the wok: your box is ready in about three minutes.
