Origins
Called “nem rán” in northern Vietnam and “chả giò” in the south, the nem is a filling rolled in thin wrapper and fried until golden — a festive dish made to share.

Both rolls often use the same rice paper. Three steps make all the difference.
Nems are sometimes rolled in wheat wrappers; fresh rolls almost always stay with rice paper.
The nem hides a minced filling that cooks in the oil; the fresh roll shows whole ingredients — prawns, lettuce, mint — cooked separately beforehand when needed.
At the street counter
In Southeast Asian night markets, you hear the nem and you see the fresh roll.

Nems are dipped in nước chấm, a light fish-sauce dip; fresh rolls more often in a thick hoisin-peanut sauce.

The naming puzzle
The confusion comes from words as much as plates.
Wrap the hot nem in lettuce with herbs, then dip. Eat the fresh roll straight, by hand, dipping just the tip.
