The base
rice or noodlesThe foundation, about half of the box.
The road journal · the method
Lunch is often rushed. A well-built box comes down to four simple elements, a method you can learn in thirty seconds, at home or at the counter.
Contents
The rule
No maths needed: four families of ingredients, each in its place.
Miss one of the four and the box limps along; with all four, it's a proper meal.
The base sets the texture of the whole box. There is no wrong choice, only different textures and ways of holding up.
The base fills about half the box; protein and vegetables share the other half; the sauce coats it all.
The heart
Four families are enough to never eat the same box twice in a week.

The crunch
“A vegetable that crunches is a vegetable that's been respected.”
Short cooking over a very high heat keeps vegetables firm and bright. That's the whole point of the wok.
Learn why in our article on wok cooking.
Curry, sweet-and-savoury caramel or a light stir-fry sauce: it ties the box together. Coat, don't flood; keep it aside when prepping ahead.
A bold sauce likes a neutral base; a flavoured base takes a lighter sauce.
What ruins a box
Four common mistakes, each fixed in one move.
Cool rice quickly, rinse noodles and add a little oil, undercook vegetables slightly, keep the sauce separate, and reheat with a spoonful of water, covered.
